Viognier
From Grapes grown at Mountain View Vineyards in Roanoke, VA and Pollak Vineyards in Greenwood, VA, the philosophy behind the Viognier has always been to pick the grapes when the flavors have developed, but not to let them get over ripe. The grapes are picked between 23-24 brix and are crushed and soaked on the skins overnight. This provides for aromatic intensity as well as palate structure. The wine is fermented cold in stainless steel and fermented dry.
Tasting Notes
This wine is a classic Viognier, one that has weight and body, along with a deceptive richness and crisp acidity. Peach and apricot notes, combined with a hint of anise bring out a fresh and enticing aroma, as well as a lovely texture. This Viognier remains balanced and dry on the finish.
